San Blas rolls

  • 2 eggs
  • 250 g sugar
  • 160 g olive oil
  • 1 teaspoon cinnamon
  • the grated rind of 1 lemon
  • 450 g flour
  • 2 packs of rising agent (2 blue sachets + 2 white sachets)
San Blas rolls

Preheat the oven to 180°C. Beat the eggs and sugar together. Add the oil and the grated lemon peel and continue beating the ingredients together. Fold in half the flour, the cinnamon and the rising agent/yeast.Beat to incorporate all the ingredients, then add the remaining flour by hand, forming the mixture into a dough.

Form the dough into small rolls and place on a baking tray lined with baking parchment. Bake for about 20 minutes or until lightly golden brown.
