Short bread “Los 4 iguales”

  • ½ kg of lard
  • ½ kg of sugar
  • ½ kg of almond flour
  • ½ kg of toasted white flour
  • 2 whole eggs
  • 2 egg yolks
  • 1 grated lemon
  • a little cinnamon

Put the lard in a bowl and work it until it softens. Next, add the sugar, the rusts, the striped lemon, the toasted flour and, finally, the almond flour. You knead well, make small balls and shave a face to go placing them. Beat the two egg whites that are left over and brush the balls with a brush. You put a whole peeled almond in the middle.

You shake the sugar and the cinnamon out of the oven.
